Look for firm, creamy-beige roots topped with fresh, green leaves. Avoid product that is yellowing or wilting.

Bitter flavor can develop if parsley root is exposed to ethylene gas. Store away from ethylene-producing fruits and ripening rooms.

Improper storage can adversely affect parsley root:

  • Wilting and weight/color loss may occur if held at low humidity.
  • Decay and brown discoloration can be caused by high temperatures.
Usage Ideas:

  • Thin parsley root purée with cream and stock; garnish soup with roasted, sliced chestnuts.
  • Peel and chop parsley root, carrots, and potatoes; chop into strips; toss with sliced onions, garlic, and olive oil; bake until browned.
