Receiving Inspecting:

Choose firm, medium-sized roots. Avoid flabby or soft product. White salsify may be sold in bunches with tops attached.

Storage Handling:

Short-term storage recommendation (7 days or less)

  • 32-36° F/0-2° C
  • 90-98% relative humidity
30 days.

Salsify may become dehydrated and shriveled if stored in an area with low humidity.

Water-soaked or soft spots indicate freeze damage.

Usage Ideas:

  • Substitute salsify chunks for potato in clam and oyster chowders.
  • Stir roasted and puréed salsify into mashed potatoes.
