Receiving Inspecting:

Look for yuca roots that are free of cracks and exhibit white flesh. Avoid roots with yellow flesh.

Storage Handling:

Short-term storage recommendation (7 days or less)

  • 60-65° F/16-18° C
  • 85-95% relative humidity
30 days.

Cracked skin and yellow flesh are signs of age.

Gray discoloration and internal streaking indicate chill injury. Store properly.

Usage Ideas:

  • Mash boiled yucca and roasted garlic; serve with roasted pork and black beans.
  • Chop yucca into French fry strips; deep fry and serve with jalapeno mayonnaise.
