Garlic Confit

Add intense flavor to roasted meats, salad dressing, and vegetable side dishes with what many chefs call their secret weapon.


1 cup Ready-Set-Serve Peeled Garlic

Olive oil for poaching (approximately 1 cup)

2 bay leaves

2 sprigs Markon First Crop Thyme


Put all ingredients in a heavy-bottom pot. Bring to a boil, then reduce to a low simmer. Continue simmering until all garlic is tender (approximately 25 minutes). Strain and use garlic immediately.

DO NOT store confit due to the potential for botulism.
