Receiving Inspecting:

Good quality okra pods should be clean, fresh-looking, tender, and well-shaped. Avoid mis-shapen or decayed pods.

Storage Handling:

Short-term storage recommendation (7 days or less)

  • 45-50° F/7-10° C
  • 85-95% relative humidity
7 to 10 days.

Pitting, discoloration, water-soaked spots, and decay are indications of chill injury.

Yellow discoloration, tough texture, and rapid decay can occur if okra is stored at high temperatures.

Exposure to low humidity can cause shriveling.

Okra is very susceptible to bruising and will turn black. For best quality, keep handling to a minimum; do not drop shipping containers on the floor.

Yellowing and loss of green color can occur if okra is exposed to ethylene gas. Keep product away from ethylene-producing fruits and ripening rooms.

Usage Ideas:

  • Stew okra with tomatoes, garbanzo beans, and onions with garam masala paste; serve with white rice.
  • Stew chicken with okra, garlic, corn, sweet potatoes, and thyme; offer buttermilk biscuits on the side.
