Common Packs:

5-, 10-, 15-, and 20-lb. packs.

Receiving Inspecting:

Rhubarb stalks should be straight, firm, and smooth. Avoid limp or discolored rhubarb.

Storage Handling:

Short-term storage recommendation (7 days or less)

  • 32-36° F/0-2° C

Rhubarb may become moldy if it is stored in a warm area with low air circulation.

If stored in an area with low humidity, rhubarb may become limp.

Water-soaked or soft spots indicate freeze damage.

Usage Ideas:

  • Simmer rhubarb stalks with sugar, vinegar, green onions, and ginger until soft; serve chutney with country ham.
  • Cook rhubarb, sugar, cinnamon, star anise, red wine, and duck stock until reduced to a glaze; drizzle over duck breasts.
